METHOD

Step 1

Rinse the quinoa under cold water to remove any bitterness, then combine it with water in a pot (1 cup quinoa to 2 cups water).

Step 2

Bring the water to a boil, then reduce heat to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and the water is absorbed. Fluff with a fork and set aside to cool.

Step 3

In a large bowl, combine chopped spinach, kale, diced cucumber, diced avocado, and rinsed chickpeas.

Step 4

In a blender, combine lemon juice, olive oil, fresh basil, fresh parsley, garlic, salt, and pepper to make the green goddess dressing. Blend until smooth and creamy.

Step 5

Once the quinoa has cooled, add it to the vegetables in the bowl and toss well.

Step 6

Drizzle the green goddess dressing over the quinoa bowl and gently mix until everything is fully coated with the dressing.
