METHOD

Step 1

Heat the vegetable broth in a saucepan and keep it warm on low heat.

Step 2

In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until soft and translucent.

Step 3

Add sliced mushrooms to the pot, cooking until they are tender and have released their moisture.

Step 4

Stir in the Arborio rice, cooking for 1-2 minutes until the rice is slightly translucent.

Step 5

Pour in the white wine and let it cook, stirring continuously until it's mostly evaporated.

Step 6

Add a ladle of the warm vegetable broth to the rice mixture and stir until the liquid is absorbed. Continue adding the broth one ladle at a time, stirring frequently until the rice is creamy and al dente.

Step 7

Once the rice is cooked, remove from heat and stir in grated Parmesan cheese until melted and combined. Season with salt and black pepper to taste.

Step 8

Garnish with chopped fresh parsley before serving.
