Preheat your oven to 425°F (220°C).
To make the crust, in a large bowl, mix 2 1/2 cups of all-purpose flour, 1 tablespoon of granulated sugar, and 1/2 teaspoon of salt.
Cut in 1 cup of cold vegan butter until mixture resembles coarse crumbs.
Stir in just enough ice water, about 1/4 cup, so that dough holds together when pressed. Divide the dough in half, shape into disks and wrap each in plastic. Refrigerate 30 minutes.
In a large bowl, toss the sliced apples with 2 tablespoons of lemon juice.
Add 3/4 cup of sugar, 2 teaspoons of ground cinnamon, 1/4 teaspoon of ground nutmeg, 1/8 teaspoon of ground cloves, and 3 tablespoons of cornstarch. Toss to coat the apples evenly.
Roll out one piece of dough on a lightly floured surface to fit your pie dish. Trim the edges.
Fill with apple mixture and sprinkle with 1 teaspoon of vanilla extract.
Roll out second piece of dough to cover pie, cut slits in top to release steam, then place over apples. Trim and crimp the edges to seal.
Cover the edges of the pie with foil to prevent excessive browning. Bake in preheated oven for 25 minutes.
Remove foil, reduce heat to 350°F (175°C), and bake an additional 25 minutes, until crust is golden and filling is bubbly.
Allow the pie to cool for at least 1 hour before serving.
