METHOD

Step 1

In a small bowl, combine warm milk and yeast. Stir and let sit until foamy, about 5 minutes.

Step 2

In a large mixing bowl, combine flour, sugar, and salt. Add the yeast mixture and mix until a dough forms.

Step 3

Knead the dough on a lightly floured surface until smooth, about 5 minutes. Place in a bowl, cover, and let rise until doubled, about 1.5 hours.

Step 4

While dough is rising, prepare the butter block by placing butter between two sheets of parchment paper and rolling it into a flat rectangle. Refrigerate until firm, about 30 minutes.

Step 5

Roll out the risen dough into a rectangle and place the butter block in the center. Fold the dough over the butter and seal the edges.

Step 6

Roll out the dough again into a long rectangle and fold into thirds, like a letter. Wrap in plastic and refrigerate for 30 minutes.

Step 7

Repeat the rolling and folding process two more times, refrigerating between each fold.

Step 8

After the final fold, roll out the dough and cut into triangles. Roll each triangle from base to tip to form a croissant shape.

Step 9

Place shaped croissants on a baking sheet, cover, and let rise until doubled, about 1 hour.

Step 10

Preheat the oven to 400°F (200°C).

Step 11

Brush the croissants with beaten egg to give a golden shine.

Step 12

Bake croissants in the preheated oven until puffed and golden brown, about 20 minutes. Enjoy fresh and warm.
