Nothing says comfort like a warm, homemade apple pie! Filled with sweet, cinnamon-spiced apples and encased in a flaky crust, it’s a slice of fall that you can enjoy any time of year.
Preheat the oven to 425°F (220°C).
In a large bowl, mix together 2 1/2 cups of flour, 1 cup of chilled cubed unsalted butter, 1/4 cup of sugar, and 1/2 teaspoon of salt until the mixture resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, until the dough comes together. Divide dough into two balls, flatten them into disks, and wrap in plastic wrap. Refrigerate for at least 1 hour.
Peel, core, and slice 6-8 medium apples. In a bowl, combine the sliced apples with 3/4 cup sugar, 1 tablespoon cinnamon, 1/4 teaspoon nutmeg, 1 tablespoon lemon juice, and 1 tablespoon vanilla extract. Mix well and set aside.
Roll out one disk of dough on a floured surface to fit your pie pan. Place it in the pan and fill it with the apple mixture.
Roll out the second disk of dough and cover the pie. Seal the edges and cut a few slits in the top for steam to escape.
Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for another 35-40 minutes, or until the apples are soft and the crust is golden brown.
