Preheat your oven to 350°F (175°C).
In a large bowl, whisk together 1 and 1/4 cups all-purpose flour, 1/4 cup unsweetened cocoa powder, and 1/4 cup powdered sugar.
Cut 1/2 cup cold unsalted butter into cubes. Using your fingers or a pastry cutter, mix the butter into the dry ingredients until the mixture resembles coarse crumbs.
Add 1 egg yolk and 1 teaspoon vanilla extract to the mixture. Stir until combined and a dough forms.
Press the dough evenly into the bottom and up the sides of a tart pan with a removable bottom. Prick the base with a fork to prevent it from puffing up during baking.
Bake crust in the preheated oven for 15 minutes. Allow it to cool completely.
In a small saucepan, bring 3/4 cup heavy cream to a simmer over medium heat. Pour it over 1 cup semisweet chocolate chips in a bowl and let it sit for 5 minutes.
Stir the chocolate and cream mixture until smooth and glossy, creating the chocolate ganache.
Pour the chocolate ganache into the cooled tart shell. Smooth the top with a spatula.
Arrange fresh strawberries, hulled and halved or sliced, over the top of the ganache as desired.
Chill the tart in the refrigerator for at least 30 minutes or until the ganache is set.
Remove the tart from the pan before serving. Slice and enjoy!
