METHOD

Step 1

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

Step 2

In a large bowl, sift together 2 and 1/2 cups of all-purpose flour, 1/2 cup of unsweetened cocoa powder, 2 teaspoons of baking powder, 1 and 1/2 teaspoons of baking soda, and 1 teaspoon of salt. Set aside.

Step 3

In another bowl, cream together 1 cup of softened butter and 2 cups of sugar until light and fluffy. Beat in 3 large eggs, one at a time, then stir in 2 teaspoons of vanilla extract.

Step 4

Gradually add the dry ingredients to the creamed mixture, alternating with 1 cup of milk, starting and ending with the flour mixture. Mix until just combined.

Divide the batter evenly among the prepared cake pans.

Step 6

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

For the milk chocolate ganache, melt 8 ounces of milk chocolate with 1/2 cup of heavy cream in a heatproof bowl over simmering water. Stir until smooth, then let cool and thicken slightly.

Step 9

To make the white chocolate buttercream, beat 1 cup of butter until fluffy. Gradually add 2 cups of powdered sugar and 1 teaspoon of vanilla extract, mixing well. Melt 6 ounces of white chocolate and mix it into the buttercream until smooth.

Step 10

Place one cake layer on a serving plate, spread with half of the milk chocolate ganache. Repeat with the second layer and remaining ganache. Top with the third cake layer.

Step 11

Frost the entire cake with the white chocolate buttercream.
