Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a medium saucepan, combine 1 cup water and 1/2 cup unsalted butter. Bring to a boil over medium heat.
Reduce heat to low, add 1 cup all-purpose flour, and stir vigorously until it forms a ball and pulls away from the sides of the pan.
Remove from heat and let it cool for a couple of minutes.
Add in 4 eggs, one at a time, beating well after each until the mixture is smooth and glossy.
Spoon the dough into a piping bag with a 1/2-inch round tip. Pipe 1-inch rounds onto the prepared baking sheet, about 2 inches apart.
Bake in the preheated oven for 20 minutes or until golden brown and puffed up. Allow them to cool completely on a wire rack.
In a mixing bowl, whip 1 cup heavy cream, 2 tablespoons sugar, and 1 teaspoon vanilla extract until stiff peaks form.
Make the chocolate sauce by melting 6 oz of dark chocolate in a heat-resistant bowl over simmering water, stirring until smooth.
Once the profiteroles are cool, cut them in half horizontally and fill them with the whipped cream.
Drizzle the melted chocolate over the filled profiteroles or dip the tops in chocolate sauce for extra indulgence.
Serve immediately and enjoy these heavenly little treats!
