METHOD

Step 1

Preheat oven to 425°F (220°C). Grease four ramekins and dust with cocoa powder.

Step 2

In a microwave-safe bowl, melt 4 oz of dark chocolate and 1/2 cup of unsalted butter in 30-second intervals, stirring each time until smooth.

Step 3

Stir in 1 cup of powdered sugar until fully incorporated.

Step 4

Beat in 2 whole eggs and 2 additional egg yolks until well combined.

Step 5

Gently fold in 1/3 cup of all-purpose flour until no lumps remain.

Divide half of the batter between the prepared ramekins. Spoon 2 tablespoons of strawberry coulis into the center of each and cover with the remaining batter.

Bake for 12-15 minutes until the edges are firm but the center is still soft.

Let cool for 1 minute, then invert onto plates.
