METHOD

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds.

Step 3

In a skillet over medium heat, sauté diced onions and minced garlic until translucent.

Add cooked rice, drained black beans, corn, cumin, chili powder, salt, and pepper to the skillet; stir until combined and heated through.

Stuff each bell pepper with the rice mixture, packing it tightly and leaving a bit of space at the top.

Place the stuffed peppers upright in a baking dish and sprinkle with shredded cheddar cheese.

Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbling and golden brown.
