METHOD

Step 1

Pound the pork loin chops to an even thickness of about 1/2 inch using a meat mallet.

Step 2

Season both sides of the pork chops with salt and pepper.

Step 3

Set up a breading station: Place flour in one bowl, beaten eggs in another, and bread crumbs in a third bowl.

Step 4

Dredge each pork chop first in flour, shaking off excess, then dip in the beaten eggs, and finally coat generously with bread crumbs.

Step 5

In a large skillet, heat enough vegetable oil over medium-high heat to cover the bottom of the pan.

Step 6

Once the oil is hot, carefully add the breaded pork chops. Cook until golden brown and crispy, about 3-4 minutes per side.

Step 7

Remove from skillet and drain on paper towels.

Step 8

Serve hot with lemon wedges on the side.
