METHOD

Step 1

Tear the injera into small, bite-sized pieces and set aside.

Step 2

In a large pan over medium heat, melt the niter kibbeh. Once melted, add the chopped onions and sauté until translucent, about 5 minutes.

Step 3

Add minced garlic and continue to sauté for another 1-2 minutes until fragrant.

Step 4

Stir in the berbere spice mix, ensuring the onions and garlic are well-coated with the spices.

Step 5

If using leftover stew, add to the pan and mix well with the spiced onions and garlic.

Step 6

Add the torn injera into the pan and toss everything together to ensure the injera pieces are well coated with the spice mixture. Heat through for about 2-3 minutes.

Step 7

Season with salt and pepper to taste.

Step 8

Serve immediately, garnished with additional berbere if desired.
