METHOD

Step 1

In a large bowl, mix the yogurt, minced garlic, grated ginger, garam masala, coriander, cumin, turmeric, and salt to create a marinade.

Step 2

Add the boneless chicken thighs to the marinade and let it sit for at least 30 minutes, or overnight for best flavor.

Step 3

In a large skillet or pan, heat olive oil over medium heat. Add chopped onions and sauté until translucent.

Remove the chicken from the marinade and add it to the skillet. Cook until the chicken is browned on all sides.

Stir in the tomato puree and bring to a simmer. Reduce heat and let it cook for 10 minutes.
