METHOD

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large mixing bowl, combine 2 tablespoons of sugar, 1 teaspoon of cinnamon, and 1 tablespoon of flour. Peel, core, and slice 3-4 apples into thin slices and toss them in the sugar mixture. Set aside.

To make the crust, in a food processor, pulse 1 ¼ cups of flour, 1/2 teaspoon of salt, and 1 teaspoon of sugar until mixed. Add 1/2 cup (1 stick) of chilled, cubed butter and pulse until the mixture resembles coarse crumbs.

Gradually add 2-4 tablespoons of ice water, 1 tablespoon at a time, pulsing until the dough just comes together when pinched.

Turn the dough onto a floured surface, shape into a disk, wrap in plastic, and chill for at least 15 minutes.

Roll out the chilled dough into a rustic circle about 12 inches in diameter. Transfer to a parchment-lined baking sheet.

Arrange the apple slices neatly in the center, leaving a two-inch border all around. Fold the edges of the dough up and over the apples, pleating as needed.

Beat one egg and lightly brush it over the dough edges. Sprinkle with turbinado sugar if using.

Bake in the preheated oven for 35-45 minutes until the crust is golden brown and the apples are tender.
