Nourishing and filling, this lentil soup is the ultimate comfort food! Packed with wholesome lentils and veggies, it’s hearty enough to take the chill off even the coldest day.
Rinse the lentils under cold water and set aside.
In a large pot, heat the olive oil over medium heat.
Add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables soften.
Stir in the garlic and cook for another minute until fragrant.
Add the lentils, vegetable broth, canned tomatoes, bay leaf, thyme, salt, and pepper. Bring to a boil.
Reduce the heat to low and let simmer for about 30-35 minutes, or until the lentils are tender.
Remove the bay leaf before serving. Adjust seasoning if necessary. Serve hot.
