METHOD

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving overhang on the sides for easy removal after baking.

Step 2

In a large mixing bowl, whisk together the melted butter and light brown sugar until smooth and creamy.

Step 3

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually fold this dry mixture into the wet mixture until just combined.

Step 5

Gently fold in the white chocolate chips.

Step 6

Pour the blondie batter into the prepared baking dish and spread it evenly.

Step 7

Drop spoonfuls of the mashed raspberries on top of the batter, then use a toothpick or skewer to swirl the raspberries gently into the batter, creating a marbled effect.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.

Step 9

Let the blondies cool completely in the pan on a wire rack before lifting out using the parchment overhang. Cut into squares and enjoy!
