Heat olive oil in a large pot over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in fresh peas and cook for another 2 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes until peas are tender.
Remove the pot from heat and add fresh mint leaves.
Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
