METHOD

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in fresh peas and cook for another 2 minutes.

Step 4

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes until peas are tender.

Step 5

Remove the pot from heat and add fresh mint leaves.

Step 6

Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.

Step 7

Stir in the cream to add richness, and season with salt and pepper to taste.

Step 8

Serve hot or chilled, garnished with extra mint leaves if desired.
