METHOD

Step 1

In a large paella or deep frying pan, heat olive oil over medium heat.

Step 2

Sauté chopped onion, garlic, and bell pepper until softened.

Step 3

Add the bomba rice and stir to coat it in the oil and vegetables.

Step 4

Pour in the seafood stock and add the saffron threads. Stir to combine and bring to a simmer.

Step 5

Arrange shrimp and mussels on top of the rice. Reduce heat to low and cover with a lid.

Step 6

Cook for about 15-20 minutes, or until the rice is tender and the seafood is cooked through.

Step 7

Add frozen peas in the last 5 minutes of cooking.

Step 8

Remove from heat and let it rest for a few minutes before serving.

Step 9

Serve with lemon wedges on the side for added zest.
