METHOD

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large oven-safe pot or tagine, heat olive oil over medium heat.

Add the onion and sauté until soft and translucent, about 5 minutes.

Stir in the garlic and ginger, cooking until fragrant, roughly 1 minute.

Add ground cumin, cinnamon, and turmeric, stirring to coat the onions in spices.

Place chicken thighs into the pot, browning on both sides, approximately 4 minutes each side.

Pour in chicken broth and diced tomatoes, mixing well with the chicken and spices.

Add in chopped dates and almonds, along with the sliced carrots and bell peppers.

Season with salt and black pepper to taste.

Cover the pot and place it in the oven to cook for 45-50 minutes, until the chicken is tender and fully cooked.
