METHOD

Step 1

Rinse the long grain rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, heat the olive oil over medium heat.

Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add minced garlic and sauté for another 30 seconds until fragrant.

Stir in the rice, ensuring each grain is coated with the oil and onion mixture. Cook for 1-2 minutes, stirring constantly.

Add the chicken or vegetable broth to the saucepan and bring the mixture to a gentle boil.

Once boiling, reduce the heat to low and cover. Let it simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.

Remove the saucepan from the heat and let it sit, covered, for another 5 minutes.

Fluff the rice with a fork and stir in the lemon zest, lemon juice, chopped fresh parsley, and chopped fresh dill.
