Experience the taste of Spain right from your kitchen with this delightful Spanish Tortilla. It's a traditional and comforting dish that transforms simple ingredients into something extraordinary. Imagine slicing into a softly set egg, contrasted by crispy-edged potatoes and sweet, caramelized onions—all coming together in a savory round that celebrates everything wonderful about Spanish cuisine. This tortilla is perfect as a hearty breakfast, a tapas option, or a light dinner, served hot or at room temperature, making it ideal for any meal of the day!
Peel the potatoes and slice them thinly, about 1/8 inch thick. Thinly slice the onion as well.
Heat olive oil in a large, non-stick frying pan over medium heat. Add the potatoes and onions, season with a pinch of salt and black pepper, and cook until the potatoes are tender and golden, about 15 minutes. Stir occasionally to ensure even cooking.
In a large bowl, beat the eggs and season with salt and pepper.
Once the potatoes and onions are cooked, drain off any excess oil and add them to the beaten eggs, mixing well.
Return the pan to the stove, add a little olive oil if necessary, then pour the egg mixture back into the pan. Cook on a low heat, running a spatula around the edges occasionally until the edges begin to set, about 5 minutes.
To cook the top, place a large plate over the pan and flip the tortilla onto the plate. Gently slide back into the pan and cook for an additional 5 minutes, until fully set and slightly golden.
Remove from heat and allow the tortilla to rest for a few minutes before serving. Slice into wedges and enjoy your homemade Spanish Tortilla!
