METHOD

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Roll out half of the pie crust pastry and fit it into a 9-inch pie pan. Trim any excess and chill until needed.

Peel, core, and slice the apples. Place them in a large bowl.

Sprinkle the apples with lemon juice to prevent browning.

In a small saucepan, add honey and dried lavender flowers and simmer on low heat for about 5 minutes. Strain and set aside to cool.

Mix together granulated sugar, brown sugar, flour, salt, ground cinnamon, and ground nutmeg in another bowl.

Add the sugar mixture to the apples, tossing until they're well coated.

Pour the apple mixture into the prepared crust, mounding it slightly in the center.
