METHOD

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Tear the pita bread into bite-sized pieces and spread them on a baking sheet.

Step 3

Drizzle the pita pieces with a little olive oil and toast in the oven for about 5-7 minutes or until golden and crisp. Remove and set aside.

Step 4

In a small saucepan, warm the chickpeas over medium heat. Add the minced garlic, lemon juice, ground cumin, and salt to taste. Stir well and cook for about 5 minutes until heated through, then set aside.

In a mixing bowl, combine plain yogurt, tahini sauce, and a pinch of salt. Mix well.

In a serving dish, layer the components starting with the toasted pita pieces as the base.

Top the pita with the warm chickpeas mixture.

Drizzle the yogurt and tahini mixture over the top.

In a small pan, heat a little olive oil and lightly toast the pine nuts or slivered almonds until golden. Remove from heat.
