METHOD

Step 1

In a blender, combine 4 cups of cubed watermelon, 1 peeled and diced cucumber, 1 diced tomato, and 1 diced red bell pepper.

Step 2

Add 1/4 cup of finely chopped red onion and the juice of 1 lime to the blender.

Step 3

Blend all the ingredients until smooth. If you prefer a chunkier texture, pulse until your desired consistency is reached.

Step 4

Once blended, taste the gazpacho and season with salt and pepper to your liking.

Step 5

Chill the gazpacho in the refrigerator for at least an hour before serving, allowing the flavors to meld together.

Step 6

Before serving, give the gazpacho a good stir. Drizzle with a teaspoon of olive oil for extra richness.

Step 7

Serve the gazpacho chilled, garnished with fresh mint leaves for a refreshing touch.
