METHOD

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8 inch square baking dish with parchment paper or lightly grease it.

Step 2

In a bowl, blend 1 cup of all-purpose flour, 1/4 cup of granulated sugar, and 1/2 cup of cold butter (cut into small cubes) until the mixture resembles coarse crumbs.

Step 3

Press this mixture firmly into the bottom of the prepared pan to form the base. Bake it for 10-12 minutes until lightly golden.

Step 4

While the base is baking, in another bowl, toss 3 cups of peeled and chopped apples with 1 tablespoon of lemon juice, 1 teaspoon of ground ginger, 1 teaspoon of ground cinnamon, and 1/4 cup of brown sugar.

Step 5

In a separate bowl, mix 1/2 cup oats, 3/4 cup of flour, 1/4 cup of brown sugar, and 1/4 cup of granulated sugar. Cut in 1/4 cup of butter until crumbly. Add one beaten egg and 1 teaspoon of vanilla extract until well mixed.

Step 6

Remove the base from the oven and evenly spread the apple mixture over it.

Step 7

Sprinkle the oat topping evenly over the apples.

Step 8

Return the dish to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the apples are soft.

Step 9

Let the squares cool completely in the pan before removing and cutting into 12 squares.

Serve at room temperature or slightly warmed. Store any leftovers in an airtight container.
