METHOD

Step 1

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper and draw a circle (about 8 inches/20 cm) as a guide.

Step 2

In a large bowl, beat the egg whites until soft peaks form. Gradually add in the sugar, one tablespoon at a time, beating continuously until the mixture is glossy and stiff peaks form.

Sprinkle the cornstarch, white vinegar, and vanilla extract over the meringue and gently fold in using a spatula until well combined.

Spoon the meringue onto the circle on the parchment paper, then use a spatula to shape it and smooth the surface, building up the edges slightly to create a slight depression in the center.

Bake the meringue for 1 hour and 30 minutes, or until it is firm to the touch. Turn off the oven and leave the door slightly ajar, allowing the meringue to cool completely in the oven.

Step 6

Just before serving, whip the heavy cream in a bowl until soft peaks form. Spoon the whipped cream onto the cooled meringue.

Step 7

Arrange the slices of kiwi and strawberries over the whipped cream.
