METHOD

Step 1

Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish.

Step 2

Chop the dates and place them into a bowl. Sprinkle with baking soda, pour the boiling water over them, and set aside to soak for 5 minutes.

Step 3

In a large mixing bowl, cream the butter and dark brown sugar together until light and fluffy.

Step 4

Add the eggs one by one, mixing thoroughly after each addition. Stir in the vanilla extract.

Step 5

Blend the soaked dates, along with the soaking liquid, until smooth. Fold the date mixture into the egg mixture.

Step 6

Gradually stir in the self-raising flour until just combined. Pour the batter into the prepared baking dish.

Step 7

Bake in the preheated oven for about 35-40 minutes, or until a skewer inserted into the center comes out clean.

Step 8

For the toffee sauce, heat the heavy cream and light brown sugar in a saucepan over medium heat. Stir until the sugar is dissolved and the sauce is smooth and slightly thickened.

Step 9

Slice the baked pudding into squares and serve warm with a generous drizzle of toffee sauce.
