METHOD

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix the flour, sugar, baking powder, and salt.

Step 3

Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 4

Gently fold in the diced strawberries and chocolate chunks, being careful not to mash the berries.

Step 5

In a small bowl, whisk together the heavy cream, vanilla extract, and egg.

Step 6

Pour the wet ingredients into the dry ingredients, and stir until just combined, forming a rough dough.

Step 7

Turn the dough out onto a floured surface and shape it into a circle about 1-inch thick.

Step 8

Using a knife or bench scraper, cut the circle into 8 wedges and place them on the prepared baking sheet.

Step 9

Brush the tops of the scones with a little extra heavy cream for a golden finish.

Step 10

Bake for 15-18 minutes, or until the scones are golden brown and cooked through. Let cool on a wire rack.

Step 11

Once cooled, dip each scone into the melted dark chocolate, covering about 1/3 of each scone.

Step 12

Place dipped scones on a sheet of parchment paper and allow the chocolate to set before serving.
