METHOD

Step 1

Preheat oven to 400°F (200°C).

Step 2

In a large bowl, combine the ground pork, grated apple, breadcrumbs, egg, finely chopped onion, minced garlic, salt, and pepper. Mix until well combined.

Form the mixture into small meatballs, about 1 inch in diameter.

Heat olive oil in a skillet over medium heat. Add the meatballs in batches and cook until browned on all sides, about 5 minutes. Transfer to a baking sheet.

Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through.

While the meatballs are baking, prepare the cider gravy. In the same skillet, melt butter and stir in flour to make a roux. Gradually add cider, whisking continuously until smooth and thickened. Season with salt, pepper, and thyme to taste.
