METHOD

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together 2 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 tablespoon of baking powder, and a pinch of salt.

Step 3

Cut in 1/2 cup of cold unsalted butter until the mixture resembles coarse crumbs.

In a separate bowl, whisk 1 large egg, 1 teaspoon of vanilla extract, and 1/2 cup of heavy cream.

Add the wet mixture to the dry ingredients and stir just until combined.

Turn the dough onto a floured surface and knead it gently into a disc about 1 inch thick.

Cut the disc into 8 wedges and place them onto the prepared baking sheet.

Bake for 15-20 minutes or until the scones are golden brown. Cool on a wire rack.

To make the lemon glaze, mix 1 cup of powdered sugar with 2-3 tablespoons of fresh lemon juice until smooth.

Drizzle the glaze over slightly cooled scones and allow it to set before serving.
