Discover a harmonious blend of flavors with Blackberry Basil Jelly! The lush sweetness of ripe blackberries meets the fresh, aromatic notes of basil, creating a unique preserve that's both indulgent and intriguing. Perfect for spreading on your morning toast, dolloping on cheese platters, or gifting to friends who love a twist on traditional jelly flavors.
Sterilize jars and lids by boiling them in water for at least 10 minutes. Set aside.
In a large pot, mash the blackberries with a potato masher or a fork.
Add the water and bring the mixture to a boil over medium heat. Let it simmer for 5 minutes.
Strain the mixture through a fine mesh sieve or cheesecloth into another pot to remove seeds and solids.
Add the sugar, basil, and lemon juice to the strained blackberry juice and return to a boil.
Stir in the fruit pectin, and boil for another minute, stirring constantly.
Remove from heat and skim off any foam.
Immediately pour the hot jelly into sterilized jars, leaving about 1/4 inch of space at the top.
Seal the jars with lids and process them in a boiling water bath for 5 minutes.
Let the jars cool at room temperature. Check the seals once cool. Store in a cool, dark place.
