METHOD

Step 1

Sterilize jars and lids by boiling them in water for at least 10 minutes. Set aside.

Step 2

In a large pot, mash the blackberries with a potato masher or a fork.

Step 3

Add the water and bring the mixture to a boil over medium heat. Let it simmer for 5 minutes.

Step 4

Strain the mixture through a fine mesh sieve or cheesecloth into another pot to remove seeds and solids.

Step 5

Add the sugar, basil, and lemon juice to the strained blackberry juice and return to a boil.

Step 6

Stir in the fruit pectin, and boil for another minute, stirring constantly.

Step 7

Remove from heat and skim off any foam.

Step 8

Immediately pour the hot jelly into sterilized jars, leaving about 1/4 inch of space at the top.

Step 9

Seal the jars with lids and process them in a boiling water bath for 5 minutes.

Step 10

Let the jars cool at room temperature. Check the seals once cool. Store in a cool, dark place.
