Bring a sense of calm to your day with this peach chamomile jelly. Combining the juicy sweetness of ripe peaches with the soothing notes of chamomile, it’s perfect for afternoon tea or spreading on a slice of crusty bread while you watch the world go by. A jar of peace and fruity bliss!
First, peel and pit the peaches. Chop them into small pieces to measure about 5 cups of chopped peaches.
Place the chopped peaches in a large pot and add 1 cup of water. Bring to a gentle simmer over medium heat, cooking for about 20 minutes until the peaches are soft, stirring occasionally.
While the peaches are cooking, steep 3 chamomile tea bags in 1 cup of boiling water for about 10 minutes. Discard the tea bags, leaving the chamomile-infused water.
Once the peaches are soft, remove the pot from heat and puree the mixture with an immersion blender until smooth. Alternatively, transfer the peaches to a stand blender if you don’t have an immersion one.
Return the peach puree to the pot and add the chamomile-infused water, 3 cups of granulated sugar, and 1/4 cup of lemon juice. Stir well to combine.
Gradually stir in 1 package (1.75 ounces) of fruit pectin, ensuring there are no lumps.
Place the pot back on the stove and bring it to a rolling boil over high heat. Once boiling, continue to cook for 1 minute while stirring constantly.
Once cooked, remove the pot from heat and skim off any foam that may have formed on the surface.
Carefully ladle the hot jelly into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims, and seal with sterilized lids and rings.
Allow the jars to cool at room temperature. If canning for preservation, process the jars in a boiling water bath for 5-10 minutes, depending on your altitude.
Store the peach chamomile jelly in a cool, dark place. Once opened, keep refrigerated and consume within a month.
