Heat olive oil in a large skillet over medium-high heat.
Season the chicken breasts with salt, black pepper, garlic powder, and half of the ranch seasoning mix.
Add the chicken to the skillet and cook until browned, about 5-6 minutes per side. Remove chicken and set aside.
In the same skillet, add the halved baby potatoes and the remaining ranch seasoning. Stir to coat the potatoes in the seasoning.
Cook the potatoes for about 15 minutes, stirring occasionally, until they are fork-tender.
Return the chicken to the skillet and place it on top of the potatoes. Cover and cook for another 5-10 minutes until the chicken reaches an internal temperature of 165°F (75°C).
Garnish with fresh parsley before serving.
