METHOD

Step 1

Prepare your jars by boiling them in water to sterilize, then set aside.

Step 2

Put on gloves and dice the jalapeños. Opt for removing seeds if you want a milder jelly.

Step 3

In a blender or food processor, finely chop the jalapeños and green bell pepper. Add vinegar and blend until smooth.

In a large saucepan over medium heat, combine the jalapeño mixture, remaining vinegar, and sugar. Stir until the sugar is dissolved.

Bring the mixture to a boil over high heat, then quickly stir in the liquid pectin.

Add a few drops of red food coloring if you desire a vibrant hue, stirring well to blend.

Boil for 1 minute, then remove the jelly from heat.

Pour the hot mixture into the sterilized jars, leaving about 1/4 inch of headspace.

Seal with lids, then process the jars in a boiling water bath for 5 minutes.

Allow jelly to cool at room temperature. Check seals, then refrigerate or store in a cool, dark place.
