METHOD

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cook the jumbo pasta shells according to package instructions until al dente, then drain and set aside.

Step 3

In a skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, and sauté until translucent.

Step 4

Add fresh spinach to the skillet and cook until wilted. Remove from heat and let cool.

Step 5

In a large bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, cooked spinach mixture, egg, salt, and pepper. Mix until well combined.

Step 6

Stuff each cooked pasta shell with the spinach and ricotta mixture.

Step 7

Spread a thin layer of marinara sauce at the bottom of a baking dish. Arrange the stuffed shells in the dish, then cover them with the remaining marinara sauce.

Step 8

Sprinkle additional mozzarella cheese on top if desired.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 10

Remove the foil and bake for an additional 15 minutes or until bubbly and golden brown on top.
