METHOD

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, combine 1 1/4 cups all-purpose flour and 1/4 cup granulated sugar. Cut in 1/2 cup of unsalted butter until the mixture resembles coarse crumbs.

Stir in 1 egg yolk and 1 teaspoon of vanilla extract, then add 1-2 tablespoons of cold water until the dough just comes together.

Press the dough into a 9-inch tart pan, ensuring even thickness, and chill for 15 minutes in the refrigerator.

While the crust chills, coarsely chop 2 cups of walnuts and set aside.

In a saucepan over medium heat, combine 1 cup of brown sugar, 1/2 cup of corn syrup, and 1/4 cup of heavy cream. Stir until well blended and the sugar has dissolved.

Let the mixture come to a gentle simmer, then remove from heat and cool slightly.

Beat 1 egg into the cooled mixture, ensuring it is well incorporated, then stir in the walnuts and 1/4 teaspoon salt.

Pour the walnut mixture into the prepared crust, spreading it evenly.

Bake the tart in the preheated oven for about 40-45 minutes, or until the filling is set and the crust is golden brown.
