METHOD

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Step 3

Heat olive oil in a skillet over medium heat. Add chopped onions and bell peppers, sautéing until soft, about 5 minutes.

Step 4

Add spinach to the skillet and cook until wilted, about 2 minutes.

Step 5

Pour the egg mixture over the vegetables in the skillet. If desired, sprinkle cheese on top.

Step 6

Cook without stirring for about 5 minutes or until the edges begin to set.

Step 7

Transfer the skillet to the preheated oven and bake for 20 minutes, or until the frittata is firm in the center and lightly browned on top.

Step 8

Remove from oven and let it cool for a few minutes before slicing into wedges. Serve hot or at room temperature.
