METHOD

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 3

In another bowl, cream together the softened butter and sugar until light and fluffy.

Step 4

Add the egg and vanilla extract to the butter-sugar mixture and mix until combined.

Step 5

In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

Step 6

Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.

Step 7

Fold in the mashed bananas gently until evenly distributed throughout the batter.

Step 8

Pour the batter into a greased 9x5 inch loaf pan.

Step 9

Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.

Step 10

Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
