METHOD

Step 1

Combine 1 cup of sugar and 1 cup of water in a saucepan over medium heat. Stir until the sugar dissolves completely to make a simple syrup. Let it cool.

Step 2

In a blender, add 2 cups of fresh raspberries, 1/2 cup of lime juice, 1 tablespoon of lime zest, and the cooled simple syrup.

Step 3

Blend the mixture until smooth. For an extra smooth sorbet, strain the mixture through a fine-mesh sieve to remove the raspberry seeds.

Step 4

Pour the strained mixture into an ice cream maker and freeze according to the manufacturer’s instructions. If you don't have an ice cream maker, pour the mixture into a shallow dish, cover, and freeze.

Step 5

If freezing in a dish, stir the mixture every 30 minutes to break up ice crystals until it's firm and scoopable, about 4 hours.

Step 6

Serve in bowls with a garnish of lime zest or fresh raspberries, and add a cocktail umbrella if desired!
