METHOD

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 3

In an oven-safe skillet, heat olive oil over medium heat and sauté the onions and bell peppers until softened, about 5 minutes.

Step 4

Add the spinach to the skillet and cook until wilted, about 2 minutes.

Spread the veggies evenly in the skillet, then pour the egg mixture over the top. Stir gently to combine.

Step 6

Sprinkle grated cheddar cheese evenly on top of the egg mixture.

Step 7

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the frittata is set and golden brown on top.
