METHOD

Step 1

Rinse the sushi rice under cold water until the water runs clear.

Step 2

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and let simmer for 15 minutes.

Step 3

Remove the saucepan from heat and let the rice sit covered for an additional 10 minutes.

Step 4

In a small bowl, mix the rice vinegar, sugar, and salt until fully dissolved.

Step 5

Gently fold the vinegar mixture into the cooked rice with a wooden spoon. Spread the rice onto a flat surface to cool slightly.

Step 6

Place a sheet of nori, shiny side down, on a bamboo sushi mat. Wet your hands and spread a thin layer of rice evenly over the nori, leaving a 1-inch border at the top.

Step 7

Arrange slices of avocado, cucumber, and imitation crab sticks in a line across the center of the rice.

Step 8

Carefully roll the sushi using the mat to help shape it into a tight log, starting from the end closest to you.

Step 9

Sprinkle toasted sesame seeds over the roll, pressing gently to adhere them.

Step 10

Using a sharp knife, slice the roll into bite-sized pieces.

Step 11

Serve with soy sauce for dipping and enjoy your handmade California rolls!
