METHOD

Step 1

Cook the ramen noodles according to package instructions. Drain and set aside.

Step 2

In a large pot, heat vegetable oil over medium heat. Add 8 whole garlic cloves and sauté until golden brown and fragrant. Remove the garlic cloves and set aside to cool. These will be used as garlic chips for topping.

Step 3

To the same pot, add the thinly sliced pork shoulder and cook until browned. Remove and set aside.

Step 4

Pour the chicken broth into the pot and bring to a simmer. Stir in soy sauce, salt, and pepper to taste.

Step 5

Thinly slice another 4 garlic cloves and add to the broth. Let simmer for about 20 minutes to allow the garlic flavor to infuse the broth.

Step 6

Add the pork slices back into the broth and cook for an additional 10 minutes.

Step 7

While the broth is simmering, heat a small amount of sesame oil in a pan over medium heat. Add the spinach and sauté until just wilted. Set aside.

Step 8

To assemble the ramen bowl, divide the cooked noodles into four bowls. Ladle the garlic-infused broth with pork over the noodles.

Step 9

Top with sautéed spinach, garlic chips, and finely chopped green onions.
