METHOD

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, whisk together 1/4 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, 2 tablespoons apple cider vinegar, and 2 tablespoons olive oil to make the marinade.

Step 3

Place the pork tenderloin in a shallow baking dish and season it with salt and freshly ground black pepper.

Step 4

Pour the honey-garlic marinade over the pork and toss it gently to ensure it's all evenly coated. Let it marinate for at least 10 minutes to an hour for deeper flavor enhancement.

Step 5

Sprinkle the pork with fresh thyme leaves, then cover the baking dish with foil.

Step 6

Roast in the preheated oven for about 25 minutes, then remove the foil.

Step 7

Continue roasting uncovered for another 20-30 minutes or until the pork reaches an internal temperature of 145°F (63°C). Baste occasionally with the sauce in the pan for extra glaze.

Step 8

Once done, remove the pork from the oven and let it rest for about 5 minutes to retain juices.

Step 9

Slice the tenderloin and serve hot with the remaining sauce drizzled on top. Enjoy with your favorite sides such as mashed potatoes or steamed vegetables.
