In a large bowl, combine 2 cups of all-purpose flour, 1 tablespoon of sugar, and 1 teaspoon of salt.
In a small bowl, stir together 1 tablespoon of active dry yeast and 1/4 cup of warm water. Let it sit for 5 minutes until it becomes frothy.
Add the yeast mixture to the flour along with 3/4 cup of warm water and 1 tablespoon of olive oil. Mix until a soft dough forms.
Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour, until doubled in size.
Preheat your oven to 400°F (200°C).
Once the dough has risen, divide it into 4 equal pieces. Roll each piece into a disc about 1/4-inch thick.
For za'atar topping, mix 1/4 cup of za'atar with 1/4 cup of olive oil and spread over 2 of the dough discs.
For cheese topping, sprinkle shredded mozzarella cheese on the remaining 2 discs.
Transfer the topped dough discs to a baking sheet lined with parchment paper.
