Melt 2 tablespoons of butter in a large oven-safe skillet over medium heat.
Add the sliced apples, 1/2 cup of brown sugar, 1 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg. Stir to combine and cook for about 10-12 minutes or until the apples are tender and caramelized.
Stir in 1 teaspoon of vanilla extract and remove from heat.
