METHOD

Step 1

Drain and rinse the canned chickpeas and transfer them to a food processor.

Step 2

Add parsley, cilantro, garlic, cumin, coriander, baking powder, flour, and salt to the food processor.

Pulse until combined, but not completely smooth; the mixture should still be a bit chunky.

Step 4

Form the falafel mixture into small balls or patties and place them on a plate.

Step 5

Heat oil in a frying pan over medium heat. Fry the falafel for about 3-4 minutes on each side until golden brown and crispy.

Step 6

While the falafel are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and a little water until smooth. Season with salt to taste.

Step 7

Warm the pita bread in a dry skillet or microwave for a few seconds until pliable.

Step 8

Assemble the wraps by placing lettuce, sliced tomatoes, diced cucumber, and falafel in the pita.

Step 9

Drizzle with tahini sauce, wrap it up, and enjoy!
