A showstopper for any special occasion, this prime rib is coated with a herb crust and slow-roasted to juicy perfection. It’s a treat that everyone will remember!
Preheat the oven to 450°F (230°C).
In a bowl, mix together the chopped rosemary, thyme, parsley, minced garlic, olive oil, salt, and pepper to form a herb paste.
Rub the herb paste all over the prime rib, ensuring it is evenly coated.
Place the prime rib on a rack in a roasting pan, bone side down.
Roast in the preheated oven for 20 minutes to develop a crust.
Reduce the oven temperature to 325°F (165°C) and continue roasting for approximately 1 hour and 40 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Remove the roast from the oven and tent it with aluminum foil; let it rest for 20 minutes before slicing.
Slice and serve with your favorite sides.
