METHOD

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large bowl, combine 1 1/4 cups of all-purpose flour, 1/2 cup unsalted butter (chilled and cubed), 1 tablespoon granulated sugar, and a pinch of salt. Use a pastry cutter to mix until the mixture resembles coarse crumbs.

Step 3

Add 1 egg yolk and 2 tablespoons of cold water to the flour mixture. Stir until the dough forms. Press the dough into a tart pan with a removable bottom, ensuring it is evenly spread across the bottom and up the sides.

Step 4

Bake the crust in the preheated oven for 15 minutes, then remove and let it cool while you prepare the filling.

Step 5

In a medium saucepan, combine 1 cup of light corn syrup, 1/2 cup of brown sugar, and 1 teaspoon of vanilla extract. Heat over medium heat until the sugar dissolves.

Step 6

Whisk in 3 large eggs, ensuring they are fully integrated into the mixture.

Step 7

Stir in 1 1/2 cups of pecan halves, making sure they are well-coated with the syrup mixture.

Step 8

Pour the pecan filling into the prepared crust, spreading the pecans evenly.

Step 9

Return the tart to the oven and bake for an additional 30 minutes or until the filling is set and the top is lightly browned.

Step 10

Allow the pecan tart to cool to room temperature before removing it from the tart pan. Serve and enjoy!
