Preheat your oven to 400°F (200°C).
Wash and trim the beets, then wrap them in aluminum foil and place them on a baking sheet.
Roast the beets in the oven for about 45 minutes, or until they are tender when pierced with a fork.
Once cooked, let the beets cool for a few minutes, then peel the skins off and slice them into wedges.
In a large salad bowl, combine the mixed greens, roasted beet wedges, and candied walnuts.
