METHOD

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and trim the beets, then wrap them in aluminum foil and place them on a baking sheet.

Step 3

Roast the beets in the oven for about 45 minutes, or until they are tender when pierced with a fork.

Step 4

Once cooked, let the beets cool for a few minutes, then peel the skins off and slice them into wedges.

Step 5

In a large salad bowl, combine the mixed greens, roasted beet wedges, and candied walnuts.

Step 6

Crumble goat cheese over the top of the salad.

Step 7

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper to create a dressing.
