These hearty enchiladas are filled with seasoned beef and topped with rich red sauce and cheese, baked to perfection. They’re a fiesta on a plate!
Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat and sauté chopped onion until translucent.
Add ground beef to the skillet, breaking it up as it cooks. Stir in taco seasoning and cook until the beef is fully browned.
Warm the corn tortillas in a separate pan or microwave until pliable.
Spread a layer of enchilada sauce on the bottom of a baking dish.
For each tortilla, place a portion of the beef mixture and some shredded cheddar cheese in the center. Roll up tightly and place seam-side down in the baking dish.
Repeat until all tortillas and filling are used, then pour remaining enchilada sauce over the top and sprinkle with extra cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Serve hot, garnished with sour cream if desired. Enjoy!
